This is so beautiful, yummy, and healthy that it outweighs any bit of preparation time. One of my personal faves, it is the perfect accompaniment to grilled or sauteed fish (especially salmon). Also great just by itself with some tortilla chips, piled into fish tacos, or served with pork.
Combine in a large bowl: 1 small red onion, chopped, rinsed and drained plus 1/4 C fresh lime juice
Combine separately:
1 large, ripe mango, diced
1 small red bell pepper,. diced
1/4 C coarsely chopped fresh cilantro
1 clove garlic
1/4 C fresh orange juice
1 fresh jalapeno, finely chopped minus seeds (optional)
1/4 to 1/3 C rinsed and drained, canned small black beans
salt and cracked peppercorns to taste (optional)
Add the onion lime mixture and stir. Best if served immediately, but covered and refrigerated it will keep for up to a day. My mouth is watering just writing this... enjoy!
