My family eats sweet potatoes french fries as a side dish fairly frequently, and my kids love 'em! Our favorite way of doing this is the following, although you can really add any combination of spices that you
enjoy:
SWEET POTATO FRIES
What You Need:
two or three firm orange sweet potatoes
large bowl of ice water
baking sheet
olive oil (you could use butter or canola oil too)
salt
brown sugar
chili powder
What To Do:
preheat oven to 450 degrees
scrub the potatoes, cut into long wedges (skin on) and place in bowl of ice water for 15-20 minutes.
coat the baking sheet with a light layer of olive oil
drain potatoes and pat dry with paper towels
drizzle a little olive oil over the potatoes and add one or two tablespoons of brown sugar, a tsp. salt and chili powder to taste, mix (with hands is best) until well distributed.
place potatoes on baking sheet and cook, turning as needed, until tender inside and slightly crisp and turning golden on outside, about 20 min. - do not let them burn.
Yummm, that recipe sounds awesome!

Made your sweet potato fries last night, Love them!!! I will never buy frozen french fries again! The mix of brown sugar/chili powder was perfect. I have to ask though, what does putting them in ice water do?

I'm so glad you enjoyed the sweet potato fries. I've actually skipped the ice water thing before and I don't think the difference is huge. Apparently, I think it is called "shocking" them - it is supposed to cause a thin skin to form so that they don't stick so much to the pan because of all the natural sugars and so that they become a little more "crispy".
