I figured I'd time some posts to go up while I'm spending time with my new little one and I wanted to throw in a couple more recipes that I've enjoyed and put them into the mix for the Recipe Party too - so if you try them out, be sure to let me know!
I thought I'd choose a couple of things that would seem light and appropriate for Easter. I don't know how coconut became associated with Easter, but it seems like the only time of year when there is a trend to coat cakes and cupcakes in the flaky white treat. I happen to love coconut - and these chewy cookies are so scrumptious, very easy to make and use little ingredients. For an added treat, I sometimes like to brush a thin coat of melted chocolate onto the bottoms or dunk them halfway in and cool until set. I really want to develop a key-lime version of these too - so if you've got the gumption to be creative and figure that one out, I'd love to hear about it!
WHAT YOU NEED:
2 egg whites
1/3 C sugar
2 TBLS all-purpose flour
dash salt
1/4 tsp almond extract
2 C shredded sweetened coconut
WHAT TO DO:
preheat oven to 325 degrees
grease and lightly flour cookie sheet
beat egg whites until frothy (white and bubbly, not stiff)
add sugar, flour, salt, and almond extract - mix well
add coconut
drop by tablespoons onto cookie sheet
bake just until set, lightly golden around edges (13-17 min, keep an eye on them)
remove immediately from cookie sheet and allow to cool
