Hummus with carrots or snow peas, any fresh fruit. I do almond and peanut butter, too, but I'm trying to keep my pregnancy weight gain down this time. (With my twins, I gained a mandatory 50 pounds and then fought for two years to take off the last 20.) Also, we are gluten free here, so spreading nut butter on a bunch of small rice crackers seems like more trouble than it's worth. =) I've been taking advantage of all the organic fresh produce available right now by making a tomato/basil/mozz salad every day for lunch and fruit salad for snacks. Delish!
